Hi everyone,
I picked up two Paleo cook books today and they had recipes for using shredded Cauliflower as a rice substitute for stir fires etc as well as using Cauliflower as a mashed potato substitute.
Has anyone tried this? I'm curious if it's any good. And if so does anyone have cooking tips?
I quite like the idea of this as it sounds like a great way to get some veggies. As well, I was thinking one could buy a bunch, shred it and freeze it in small ziplock bags or vacuum seal bags for quick single servings and so on... curious if anyone has gone down this path...
Off to the grocery store I go!

I'm sure the taste and texture would be fine. I can't imagine replacing that for rice...I'd be farting all day long and in agony.

ya, i agree with heather - go easy on it unless you consume collie flower already -
i had to back off broccoli dur to it giving me a massive gut ache and some funky poops - and i've been eating it for 15 years without a hitch - just another example of how nothing stays the same forever - or even a few weeks sometimes !

I used to eat that, BUC. I love cauliflower. I'd usually do 1/2 mashed potato and 1/2 cauliflower.
Now it is a rare treat.
The flavor is cauliflower. The texture can be 'wet' if you don't cook it right, but you'll figure it out pretty quickly.

huh... I never thought of that issue... Broccoli used to get to me some time ago - not sure now though as I stopped eating it.
I'll giver a go tonight with the cauliflower and see what tomorrow brings :)

Thanks tornado - I think I'll steam it lightly then fry it a bit to crisp it somewhat and dry out. Possibly even bake it - who knows. Sounds like a bit of fun in the kitchen experimenting though.
The 1/2 and 1/2 thing sounds pretty awesome as well.
