Tomorrow I'm taking 2-3 hour car trip across the state with my "boss" for some meetings then returning (2-3 more hours).
I'm not used to travel so I'm nervous, but plan on eating very carefully and light today, this evening. Mornings I typically "empty out", then I'm usually good for the rest of the day if I eat carefully.
We talked about
lunch plans and both agreed to bring our own lunch. What are some good cold lunch/snack plans that wouldn't have any digestive repercussions? What would you bring?

I know you're cooking very organic and unprocessed food. I would stick with that. Do you have a cooling box?
On my trips I had nuts or prepared scrambled eggs with veggies and brought it in a tupperware.

If you can tolerate peanut butter, bring a peanut butter sandwich. Maybe some apple sauce and a banana?

Cold rice or pasta salad with vinegrette dressing. You can add anything in the salad that agrees with you. For example chicken, roast vegetables, black olives... piece of fruit, almond chips and hummus or sunflower seed butter/ peanutbutter, string cheese if you can tolerate cheese, yogurt. Good luck. I went on a trip this weekend and I know how nervous they can make you.
