"Reducing Inflammation with Diet and Supplements: The Story of Eicosanoid Inhibition."
I came across this cool article. It talks a lot of omega 3 supplementation and other plant substances that inhibit COX and LOX enzymes. Obviously, we have drugs that do this, but it's nice to know of some of the ways we can help with diet, too. The tables at the bottom of the page are my favorite.
Definitely read it. I'm sure some of you geniuses know all about
this already, but it's explained well for us normal folk, too.

I never heard of perilla seed oil either...
Per wikipedia: http://en.wikipedia.org/wiki/Perilla_oil
Perilla oil is obtained from the seeds of herbs of the genus Perilla, usually from the species Perilla frutescens. The seeds contain 35 to 45 percent oil which is obtained by pressing. Perilla oil is used along with synthetic resins in the production of varnishes. Perilla oil dries faster than linseed oil and on drying forms a film that is harder and yellows more than that formed by linseed oil. The paint and varnish industry accounts for the largest usage. Perilla oil also is important in the manufacture of printing inks and linoleum, and in more ancient times was a critical component in creating durable earthen floors.
In parts of Asia, perilla oil is used as an edible oil that is valued more for its medicinal benefit than its flavor. Perilla oil is a very rich source of the omega-3 fatty acid alpha-linolenic acid (ALA). about
50 to 60% of the oil consists of ALA.

Ah, the good ol' concept of food as the best medicine. How did we ever miss this? :(
Very interesting link. There was a study done in Europe that linked high concentrations of omega-6 oils to the development of UC, so it makes sense that omega-3s would stop inflammation in it's tracks and possibly mitigate the damage. I'd like to be an eskimo right about
now.
I'd like to mention that Indole 3 carbinols reduce the risk of cancer by 40%. Find me or synthesize something that does that and you'll be a millionaire.

SG,
Yes. Absolutely.
Way back 1-2 years ago, I had posted an article on arachidonic acid, Omega 6 vs. Omega 3, and a listing of the foods high in Omega 6's ( to stay away from). I'll have to see if I can find it again and re-post it.

soystud, i had heard of perilla seeds from a paleo website i frequent. you can buy them on amazon. i haven't tried them myself- i don't do well with whole nuts or seeds- but i wonder if i could make a seed butter out of them. they have a very impressive omega 3 to omega 6 ratio (6:1).
