Raw butter or diary is best if you can get it since pasteurization kills the probiotics, and subsequently the vitamin K2 that results from the fermentation. Fortunately, the fat in butter and vitamin A are mostly intact after pasteurization, so butter from cooked milk is still the next best thing. :D
Personally, I try to get mine from an Amish farmer in the springtime since the cows are on pasture and get plenty of sunlight. This translates to a butter that's richer in vitamins A, D, E, K, trace minerals, CLA, wulzen factor, omega-3:6 ratio, butyrate etc. It's one of my go-to foods when my colon starts complaining.
That organic valley product with the green wrapper is the springtime version of butter, which is why it's sold in limited quantities. The bonus is that it's cultured so people with UC are able to handle it. Get it fast before it runs out!
