For a holiday party this weekend, I'm going to make Bobby Flay's sweet potato casserole with chipotle cream sauce. It's amazing. It's so simple but it's absolutely irresistible. The heat of the chipotle balances the sweetness of the sweet potatoes, rather than exaggerating it the way sweet toppings do. I don't make it very often because I would eat the entire thing by myself.
I also have a lovely recipe from Bon Appetit back in the early 90s for red potato gratin with Boursin cheese. Another one that is super easy and insanely delicious.
Seriously, other than salt & pepper, both of these recipes have three ingredients. That's so weird for me, usually my holiday foods are trickier....
