I was on a low residue diet when I was first diagnosed with UC, and then again when I was in a flare. I didn't eat any raw vegetables or fruit (other than bananas), no deep-fried foods, wheat, seeds, popcorn or nuts. I found I did ok eating canned fruit and most well cooked veggies, potatoes without the skin, rice, fish, chicken and even some red meat as long as it was tender.
Now that I'm in remission, I'm able to eat pretty much whatever I want again. Some ppl find that certain foods bother them, though, so it's pretty much trial and error.
