what embers said: listen to your gut, don't eat something your gut says not to.
My gut's reaction to bread/gluten was very silent, couldn't tell it disliked it, so I didn't remove it from my diet for years (negative celiac test). But when I did remove gluten the bleeding stopped, my gut telling me yes keep doing that, keep gluten out.
In the beginning it was hard to learn a new way of eating without bread but now, 3 years later, it's fairly easy and I don't buy many manufactured gluten-free products. I did buy gluten-free flours to make some baked goods at home and that's been fun.
One night I wanted to make a bread coating for chicken and had nothing. My smart DH looked in the pantry and said "What about
Rice Chex cereal?". Crushed some up and yum, the best pan fried chicken cutlets.
Edit to add: I also was intolerant of dairy, gluten and many, many other foods when at my worst. I just kept removing foods until my gut settled down. But I always kept taking coconut oil, olive oil, mayonnaise on stuff. Have you added resistant starches? Potato salad is a favorite.
Insoluble fiber can also cause problems for our wounded guts. Try to stay away from it until more healed. My gut could not tolerate much almond flour so out it went. Nut butters have great protein but also have insoluble fiber in them, small amounts are best. Meats with more fat were always loved by my gut and add calories.
