I have been issue free for the most part going on 2 years -
no grains or soy - pretty much everything else in varying quantities - although I did notice that green grapes gave me some interesting farts last week - not to worry tho - we all survived ;-)

As a plain old vegetarian who sometimes ate fish and junk food. I was in remission for 4 years. I ate a lot of whole grains, beans, tofu/other soy products, dried fruit and brown rice. Took no meds.

I eat normally but I don't eat many processed foods. I rarely eat meat but I think my diet is pretty standard. I tried diets when I got diagnosed and didn't see any benefit so I went back to my normal, somewhat healthy diet.

During flares or not in flares, I try to eat for comfort (less symptoms of gas, basically).
Not all foods agree with everyone, UC or not. It just gets more mentally muddled when UC is in the mix.

Dietary changes have had a huge impact for me - I gave up meat, dairy, alcohol and junk food, and have now been in remission for over a year.
These changes have been really positive for me - for the first 3 years after diagnosis I did not give diet any consideration and just went from one flair up to the next with very little remission ever. Things are much better now.
