Well none of the high heat reaction products are probably good for you.
Does it cause UC or does it contribute, possibly,there seems to be a west to east gradient.

Nicotinamide - Switch, need to look at this much more,what I think it is saying that excess B3/niacin, is turning off the de novo production of nicotinamide from tryptophan. So if we have low tryptophan from
fructose malabsorbtion,that is another reason that we have low de novo synthesis of nicotinamide.
With all the fortification of Niacin,and high fructose consumption from corn syrup,and even too much fruit juice, and or certain fruits. Lots of these fruits were probably not available to a great extent in the diet around 1900,but increased greatly from then. If this ties in with the spread of MAP, then.
