Symptoms and inflammation level can be quite different, not on the same page for many people.
Doctors treat inflammation and none of mine ever paid much attention to how bad my symptoms were which made me think they were heartless but this is what they are taught, treat what you can see.
Your symptoms can indeed be caused by your inflammation or by that nebulous diagnosis IBS, given out when nothing else can explain it. Certain food and drink definitely cause symptoms for my gut. Heavy fiber intake and/or gluten cause bleeding for me and multiple BM's can be caused by many different foods/drinks.
It took me several years to identify all dietary triggers but the funny thing is that once diet was all sorted out my symptoms started to get much better even when a "bad" food was consumed. This may or may not be of help to you, diet mod. does not help everyone. But I'm lucky it helped me because RX drugs did not help me (except for mesalamine enemas which did).
My GI does not believe IBS causes my symptoms, he thinks it's UC. But then I'm the one who has this condition and he's never been any help with symptom relief so I don't care what it's name is.
95% curcumin capsules have been a big help to me and others. Curcumin/turmeric is a natural anti-inflammatory and probably has some anti-biotic effect too. I can't take the type with pepper (bio-perine) because my gut dislikes black pepper (but likes chili powder just fine). Curcumin has had many, many studies showing it's benefits for many inflammatory conditions and is quite safe. Perhaps you should give it a try along with some diet modification.
