No surprise here. I have noticed many on this ulcerative colitis forum who not only exercise frequently, but before their disease became manifest, they worked out to the extreme such as running races and marathons, etc. Not everyone of course. Many others are convinced their IBD started after a course of antibiotics, but there are also quite a few athletes here. Perhaps intense exercise weakens your immune system?
Your diet and supplement protocol sounds pretty good. Obviously you have been lurking here for quite a while. But I wouldn't completely eschew gluten, dairy, or any food unless you are sure they are triggers for you. A food diary can help you isolate those foods that truly do affect you and which foods are harmless. I discovered that I can eat dairy but not gluten, others cannot touch dairy at all.
You didn't mention one of the most important supplements of all, Vitamin D. You need to get your blood levels tested. Most people are deficient especially those of us with IBD. Google it, vitamin D not only helps with IBD but also helps prevent cancer and heart disease. Here is an excellent discussion about

I agree with others here about
getting on a maintenance med, but I would first try the milder mesalamines. IMO immunosuppressants might be necessary only as a last resort if nothing else works. Patients on immunosuppressants are at risk of developing lymphoma, tuberculosis, kidney and liver damage, anaphylaxis, seizures, and potentially serious or fatal infections. You were already diagnosed with tubular adenoma as it is.
On the other hand mesalamines are proven to help prevent cancer. If oral mesalamines are not strong enough then you might try adding rectal mesalamines such as Rowasa enemas.
