Well cooked spinach has always been gut friendly for me, also green beans and bok choy and celery. I know potatoes are not SCD approved but resistant starch and potatoes are so loved by my gut and have been so beneficial. Any way they are cooked is good and add some cheese.
I keep trying with fruit but it keeps being a bad idea for me. Fructose just does not work for me although small amounts of white sugar are A-OK. Yogurt whether SCD or any kind = not OK, wish it was, LOVE yogurt.
Have you tried making carrot cake with GF flour? Yum. You can replace carrots with zucchini.
You can spice up your recipes by using herbs (basil, lemon basil, cilantro, dill) and ginger. They really make a difference.
