Constipation was one of my early signs of UC, actually, with many days of constant need to go, but only tiny pieces (like dime size) covered in blood & mucus coming out, and then when it would come out, I'd get big hard blobs. Even as it got worse, and at the height of this flare before I went in for a colonoscopy to get diagnosed, I still got this sort of constipation after a number of days of 7-8 D movements. Even since being on Lialda, this has been sort of the case. This past week, it was ~4 soft but formed stools a day for 4 days with very little blood if any, followed by 2 days of constipation, and today it is allll coming out. My GI said that the inflammation in the colon causes everything to slow down a bit, so it's not uncommon to be constipated for a few days now and again.
Perhaps what you should do is go back to the diet where you weren't eating all this additional soluble fiber until you are back at where you were pre-constipation, then add something new every 3-5 days (only one thing!). It could be that all of it together is bothering you, or it could be one of the specific things you are eating. Doing this previously, I learned that wheat causes gas and bloat within a few hours, and contributes to my constipation. Pre-packaged foods also contribute, probably because of all the additives, so I try to make almost everything from scratch. And make sure you are drinking enough liquids!
