Can't say I've noticed any correlation between food additives and my UC symptoms at all. I try to eat healthy, but do occasionally eat foods with food colors, emulsifiers and the like without issue the next morning in the bathroom.
If you're looking at an ingredients list on a loaf of bread that includes words you don't know or understand, then they cannot be good for you :-P Bread should include flour, milk, eggs, yeast and not much else! Usually there is healthier options if you look the labels over, local bakeries etc.
If you prepare the food yourself, then you know exactly what's in it. Make home-cooked meals with fresh veggies, meats, and other good ingredients rather than processed meals if you feel those things have an impact on your UC. I make a big crock of soup on Sunday and bring it for lunch all week long. Home cooked meals for supper. I'll have fruit as snacks during the day. Breakfast is homemade yogurt, muffins, or pancakes.
