I think you may have to accept less alcohol, given your response. Hopefully you will find some good mitigating tips. Different people with various conditions from diabetes to alcohol allergies have had to accommodate this reality in their lives.
In your case I think it is good to distinguish the "hurts so quickly" question from the "aggrevates UC symptoms" issue.
I found that if I have more than a glass of wine or two on an occasional basis, that the next day I have elevated symptoms. I attribute to the dysbiosis of my gut microbes. Since gaining remission, I find I have more tolerance.
The immediate hurt invokes the notion of an stomach ulcer or some type of GERD problem. Things just don't get into the colon that fast, and once there it take a bit more time to unsettle microbes. So the hurts immediately issue should be pursued with you GI as a separate issue.
