It could if it's so bad you are disabled from it. They will probably ask you why you haven't had surgery and you will need an answer for that.
If you do apply try to get expert advice with filling in the form (CAB or maybe the Crohn's & Colitis UK charity can help). Don't be surprised if you are turned down, because the PIP people turn down almost everybody. You can appeal. Most people (70%) win at tribunal but it takes about a year to get to that stage.
It's an appalling sytem. I got given a PIP award for 2 years. After a year of receiving it they made me go through the entire application process again, then turned me down and stopped the remainder of my award. I was so incensed I did take it to a tribunal. And won.
I should add in my case I was applying on grounds of debilitating depression and anxiety too. I'm not sure how far I'd have got with the Crohn's alone.
Anyway, if you apply good luck. I hope I haven't put you off but it's best to be aware. And if you do get rejected, it isn't remotely personal. The PIP assessors are taught to reject as many people as possible.
