Hi -

I am asking for a friend who has UC and is having a lot of problems now. Is sausage permitted on SCD?

Only if it's organic and free of any forbidden ingredients, nitrates, preservatives, etc. Because of the danger of unwanted additives, it's probably better to avoid it in the early stages of the diet.

I've found some good sausage recipes online that I modified for SCD, mainly using honey instead of sugar.

It's really hard to find without illegals in it. I found some at Whole Foods downtown (big store). I have a book...Lucy's Cookbook I think that has a terrific sausage patty recipe in it.
Grain-Free Gourmet and Eat Well, Live Well (both based on SCD) are also TERRIFIC cookbooks. I gained 10 lbs (no lie!) the month I got the grain-free one!
