This is what i made, i was happy because my husband liked it and he likes spicey food. It did seem salty to me but since that's really one of the only flavors i'm going to get for a while i figured why not. Here it is:
Ingredients:
Non-stick vegetable cooking spray
2 tbsp sesame seeds
2 tbsp soy sauce
4 tsp rice wine vinegar
4 tsp brown sugar
2 tsp dark sesame oil
16 oz medium shrimp, cleaned and deveined
1 cup carrots, cut into julienne strips
1 cup snow peas, cut in half diagonally
1 cup long-grain brown rice, cooked according to package directions, without salt or fat
Preparation:
Add sesame seeds to a small skillet that has been sprayed with non-stick vegetable spray
Cook over medium-high heat for 2 to 4 minutes or until lightly browned, stirring constantly
Remove skillet from heat and set aside
In a small bowl, combine reduced-sodium soy sauce, rice wine vinegar, and brown sugar, then set aside
In a second skillet sprayed with non-stick vegetable cooking spray, add dark sesame oil, and cook over a medium-high heat 2 to 4 minutes
Add shrimp and cook for 4 to 6 minutes, stirring constantly
Add carrots and peas
Cook for 4 to 6 minutes or until the vegetables are tender
Add soy sauce mixture and heat through while stirring constantly
Toss with hot cooked brown rice and toasted sesame seeds
Serves 4
