Sure. I have found gluten free bread crumbs and I will coat chicken tenderloins with olive oil, roll the chicken in breadcrumbs and bake it. I also cut up russett potatoes mix olive oil add salt and bake them for my healthy version of french fries. You can use ground lean beef or turkey and mix it with jasmine rice, corn, edamame or any other vegetable that is low in acid and that you can digest. I will add either gluten free soy sauce or vegan butter. I also take gluten free tostitios, add lean ground beef or ground turkey, add a little bit of cheddar cheese reduced fat (very low in lactose) and bake for nachos. I am able to tolerate gluten free potato ghnocci with some vegan butter and parmasean cheese, it is low in fat, acid and lactose. I also try and grill chicken, lean beef and turkey which adds flavor. I only season with salt.
Desserts: Vanilla Soy Ice Cream (lower in fat and no lactose), gluten free sugar cookies or cupcakes which can be made from scratch or bought from a bakery (you will have to search for it) I also can tolerate water ice (or if you are not from the east coast, Italian Ice) as long as it is low acid flavors, for example, lemon and organge is not a good option. I typically stick with vanilla. Gluten free Vanilla Chex are really good and if you are craving candy, I have found that starbursts and dumb dumbs lollipops are gluten free and seem to be ok, as long as you avoid the lemon and organge flavors.
