Sounds like you've hit a bit of a setback.
"Dumping Syndrome" should be expected. What is that? It is exactly what it sounds like. Your digestive system has had enough of whatever you've eaten and it wants to get rid of it as fast as possible. That will usually result in some pretty bad diarrhea for a little bit until your stomach isn't angry anymore. That should resolve pretty quickly though.
The esophagus is a dumb organ. The only way it knows how to communicate pain/irritation/discomfort is to make you feel like you're having heartburn. If your doctors have confirmed that the wrap is intact, there is absolutely no way (especially this close to your surgery) that you are experiencing reflux. The wrap is still tight at this point and has not loosened to the point where acid would begin to reflux into your esophagus again. If the wrap was too loose or had fallen apart, then your original symptoms would have returned like wildfire.
Now, because the wrap is still so fresh, it is also still swollen. In fact, it takes a good 5-6 months for the swelling to go away completely. If you continue to eat large meals, don't chew thoroughly enough, or swallow too much air, you will irritate your esophagus, which will cause it to swell some more, and will feel like heartburn. Esomeprazole, or even Pepto Bismol (and others like it) should help soothe your esophagus.
When all else fails, go back to your immediate post-surgery diet. Warm liquids, broths, puddings, loose mash, veg purees, etc. Don't give your esophagus, and the wrap, more than it can handle. It's still very sensitive.
