Welcome to the forum.
You're not past all the changes that will happen. It takes at least 6 months, and a year if the surgery was a long one. Too bad you had to have the dilation. I refused it and waited and went on liquids and very soft foods when I had trouble swallowing. Soft foods were going down. It took months and months for all my swelling to go down. I hope you haven't had too much dilation.
I would say, from my experience, don't eat anything that's the least bit of a problem. Chew, chew, chew, even soft foods. If you aren't making enough saliva, drink while eating. Look up in the search box at the top of the page the posts about diets and swallowing trouble.
I butter all pills that are uncoated or large. I also take them with milk, not water. You probably can't vomit, so make sure what you eat will go down! I've learned to relax and not panic. I don't gag anymore, you can learn to be calm.
Best wishes!
