So far after 1 month or so off PPI, everything was going swell until a week ago I got a really bad cough and sore throat, turns out it was a tonsil infection so my doc gave me antibiotics but then when my throat got better the cough didn't go away it's been lingering for about 2 weeks as well as some heartburn is there any way to make the cough stop?

Probably not - unfortunately, sometimes the cough lingers around for a while. Have you tried any O-T-C cough medicine? The heartburn is most likely irritation from the antibiotics, and that also should subside. I got recurrent tonsil infections as an adult, and I needed to have them removed. If the cough is unbearable, call your doctor.

I did try some OTC medicine, but to no avail sadly.
