And 15 minutes later I feel a slight shortness of breath. Protonix not working, so GI doc doesn't feel like it's acid reflux or GERD. Maybe IBS? What else could it be?

I have no idea, but I drank a coffee drink the other day from Starbuck's and about
died, so you have my sympathies. I think it is a matter of trial and error with our diet. Last night I ate a somewhat greasy soft chicken taco and had absolutely no trouble. I've had two full days with no GERD symptoms and have no idea why. I'd just avoid scones and keep trying other food to see what you can tolerate. I actually started a notebook...one side "yes" foods and one side "no" foods. Hope you feel better.
Also, shortness of breath can certainly be a little anxiety. Try deep breathing in through the nose, holding it for a count of four and slowly letting it out. Repeat for a while. This often settles things down for me.
