We made a great pasta sauce today, using butternut squash as the base instead of tomatoes. It included onions, garlic, red and green peppers, and mushrooms. First he sauteed all but the squash in olive oil, added the squash and spices: salt, pepper and chopped rosemary. Thinned it with just a little chicken stock. Served it with a few chunks of goat cheese on top.
