Escarole sauteed with olive oil and garlic. To this I added some cut-up turkey (from last night), half of a baked potato, and some chicken stock. It was quite good.
Challenges for me: Taking lunch to work, and breakfast. Those millet puffs don't stay in my stomach very long and I get HUNGRY. I take almonds and dates and goat cheese to snack on.
