First of all you are not alone as anyone with nasty arthritis can tell you it is not fun to have the aches, pains, soreness and stiffness that come with arthritis. We understand where your coming from and what you are going through. To add insult to injury you have many other things going on which I was sorry to read about.
Just as in the lumbar spine, the facet joints in the cervical spine can degenerate and lead to arthritis in the neck. Many terms are used interchangeably to refer to cervical osteoarthritis, including cervical spondylosis, degenerative joint disease, or simply neck arthritis. NSAIDS would be the drug of choice to help with your pain.
My hubby has Crohn's arthritis and osteoarthritis. He does take NSAIDS but very sparingly 2nd degree to his Crohn's, a heart condition and that fact that he only has one kidney. He has decreased range of motion in his neck and when the pain is bad he will rest and use a moist heat wrap for the neck.
I have lumbar pain that I will use NSAIDS for and it usually helps me but each person's pain is unique to them. I understand your comment re having "VERY extensive blood work" as 2 years ago I had a problem and had 9 tubes of blood drawn at one time not counting all the ones done besides this particular draw.
