Do you have a strong, sensitive gag-reflex?
Sometimes, just the "weight" of something, even a very light forkful of food, resting on the tongue can be enough to cause discomfort.
I would take extremely (as in super extremely) small bites, (like the size a small child might take), and chew your food very thoroughly. If you swallow before the food is thoroughly chewed, some of the pieces may be enough to cause a gag-reflex.
These sensations most definitely contribute to symptoms like difficulty breathing, a sensation that your tongue is swelling (because the fear is so great that subconsciously, your body's trying to not permit food to go down).
You can beat this! It just takes very small baby steps! :)
