I've heard about weird stuff like that, but I don't know if that's a "thing", so to speak. A lot of papers written on the evils of artificial sweeteners are working with huge volumes of the stuff, so of course it makes the rats sick.
Something that may be related to what you read is that some artificial sweeteners still provoke an insulin response, putting them on certain no-fly lists for diabetics. Metabolism and how your brain functions are intertwined as to be inseparable. What could possibly be a factor would be a misplaced insulin response, a drop in blood sugar, and the nosedive in mood that goes with it. I'm not a doctor or a nutritionist and I'm not up to date on the literature.
You could try experimenting with cutting certain sweeteners from your diet and seeing if you see a change. If you do, let us know! I'd love to learn more. It would be excellent to find another way to lessen anxiety without medication.
