Hey bud,
I can appreciate where you are comming from.. My X wife is bi-polar. I would highly suggest finding a counselor or therapist (for you) just to make sure you know what your are going to be up against living with a bi-polar mate or having a bi-polar girlfriend in you life. If this is out of the question I would say cut your ties with her before you get too far involved with her. There are too many other loving and mentally stable women out there to waster you time on being involved with someone who is bi-polar unless you are patient and she is willing to stay in therapy, attend support groups, realize she has a big disorder that is to be taken seriously.
My life was a total living hell due to my wifes bi-polar disorder. It later destroyed me financially, friendships, family relationships,my career and later my own health.
I am now focused on me and finding a mentally healthy person that can be my equal in having a focused and drama free life. Life is too short to so we have to chose our choices carefully,
Goog luck dude.
