Emeril Lagasi I am not, so I'm not of much help. For me every chance I get in our short summer I throw something on the grill (some kind of meat thing usually chicken, sausage - turkey or chicken sausage is a bit healthier, pork chops -not health but I love 'em, often with some bbq sauce of sorts, but sometimes just some kind of rub or marinade you can buy at the store. And the side dishes - anything I can wrap in foil, season a bit, and throw on the grill next to the meat! No pots and pans to wash. I usually cut up onions and throw them in with potatoes or vegies.
One thing I'd suggest - go to the foodtv website and search for easy recipes. I've pulled lots of things from there (me and one of the canadidate's wives LOL), even made my own recipe by cherry picking from them. Bobby Flay is king of the grill and Rachel Ray is queen of easy.
