Holiday eats?

….just thought I would pop this question for the Holiday!

If you are cooking for family and or friends this Easter Holiday….share what you are having please!

Mrs. Scream's children and grandchildren will coming for an evening meal, and I just stuck a Pork Loin on the smoker for our main dish tonight,...complete with a red wine reduction sauce….mashed potatoes and a rich brown gravy.

of course…we have painted eggs, and easter candy galore!…for the kids! The children probably won't even remember the hard work that went into the meal…as candy rates top of the mark with them!

LOL!….We run everything through the smoker first! …but yours does sound good! Red Velvet cake is one of my favorites! When the Pork Loin goes on sale I stock up!….pretty cheap eating!

yep!…bacon around a pork loin will work! Rack of Lamb has to be my favorite though. Expensive!... so I don't get it too often.

Ooo,reminds me 730 dinnertime. Can't miss out. We got a say in at moms table. She yells its gettin dangerous and we all run fer it! icgirl I am spending Easter here in Kentucky at my sisters and we had ham, turkey breast and meatballs, allong with every type of fresh fruit imaginable! I brought down with me Pickled eggs, that I made, I put the shelled hard boiled eggs in pickled beets and also put in sliced onions and let them sit in the frig for a couple of weeks, it turns the white of the eggs purple and gives them a great flavor. I also made a pineapple pie and brought down here but me and my sister and brother inlaw ate it before Easter got here! I also make a concoction called Pineapple Dope, you take chunk pineapple and drain the juice out of several cans, and put the juice in a pan and add sugar and tapiocia and heat it up till the tapiocia is clear and then juice is thick then you add the pineapple chuncks and add a jar of drained marshino cherries, to the hot pineapple mixture. You then take a deep dish, ( I like one with a flat bottom with high straight up sides, a glass dish is best so you can see it)  you line the bottom of the dish with miniture marshmellows ( about an inch deep) and then pour the hot pineapple and cherry mixture over the marshmellows and then the marshmellows melt and rise up through the mixture in the end the top is covered with melted marshmellows. You then put it in the frig and let it get cold. It is an excellent spring and summer desert dish. The tapiocia makes it thick and sweet and yummy!

I fixed a spiral ham,sweet potato's,real Mac and cheese,fresh kale/turnip greens,hard to find in FL? Fried white corn also hard to find good stuff!! Made cornbread and an Easter Bunny cake too!

IC, was born and raised in KY and moved to FL almost 5 years ago now. Love the seasons but they dont love me anymore. Too many cold days and rain. Best thing for my CP I have ever done. Miss home but 4 of my 5 kids now live here as well so I just bought home with me.Lol

We eat kind of different and finding the right foods here is a little daunting at times,they all wanted fried corn but you can never find any silver queen here so have to make do with what they have and its not the same. Also wanted mixed greens but all I could get here was some Kale and Turnip,looked a few places for collards and no deal!!

I have to say this yesterday morning I fried bacon with breakfast so I would make darn sure I had plenty enough bacon grease for the corn and the greens and cornbread right? I didnt do clean-up the kids and my son-in-law did and low and behold he is NOT from the country btw,I went to look for my bacon grease to start the greens and he thru it out!!!! I was nutso!! Ya woulda thought he would know that by now,its not like he is new to this family been in it a year and thats plenty enough time to know bacon grease is like bread and milk,you darn well better have some if you want me to cook!!

Made him go to town and buy more so dinner was a little behind schedule and thats what he deserved,bet he dont forget again!! Lol

Looks like all had a great day filled with good food,family,and maybe a few minutes of forgetting the pain.

Sure wish I could eat what you guys are eating, but it would send me to the ER. Pork naturally contains sulfites - my main intolerance/allergy.

We went to DIL's house for steaks, chicken and salmon on the grill, salad, red potatoes asparagus and the pineapple upside down cake the 5 year old made with only a little help.

Had a TV diner here (alone) But it was okay :)

Oh, one other thing, he will be able to make it up to me on Orthodox Easter though. We've always celebrated both. (my dad was American, my mother Macedonian/Greek).

Reading about all those yummy foods makes me hungry. Lol.

No major cooking by us. I made pasta today and yesterday my mother made bar-b-que chicken while I made some cookies.

It's making me hungry as well. We didn't have the money to buy anything, so we just ate what we had here, which was't much.
