Can you tolerate cheese? If so, this might work:
vege bake

that looks yummy...just one question, what is the american equivalent to "tasty" cheese? I can definitely handle cheese.

Gosh, closure, I don't know. I can't tolerate cheese so don't know much about
it. I hope someone else will be able to help you.

I seem to have forgotten that recipe a few days back in my haste out the door to class BUT here is the zucchini pancake recipe before I forget:
zucchini pancakes
2 c grated zucchini-make sure and squeeze all of the juice out of the zucchini before you put it into the mix!
2 eggs
3 tbsp melted butter
3/4 c flour
1/3 c grated parmesan(aged, not the cheap powder stuff)
pepper
1/2 tsp nutmeg
Put all of the ingredients into a bowl and mix together with a fork. I use a nonstick pan to cook mine on but really just however you normally cook your own is fine...
The recipe calls for putting slices of brie and/or tomato on top, but these are good with anything that you want really. I just like having them around.
***You can substitute various things for a lot of these ingredients obviously. I'm wanting to try almond or rice flour instead of regular flour for instance..
