There are three macronutrients- proteins, fats, and carbohydrates. Without fat, you die. Without protein, you die. Without carbohydrates, you do not die.
It takes several weeks for the body to adapt to carbohydrate restriction; your mitochondria need to get up to speed, which takes a little bit. But once it happens, the changes are dramatic. Odd things, like cold hands and feet go away. I don't suffer from "sugar crash" when working out or caving. Hunger after a meal develops much more slowly.
There's more to excluding wheat from the diet than just feeling better. If what Ebringer has to say is true, removing the starch from the diet gets to the root of the problem. It doesn't just treat the symptoms.
