Hi Bee! The main reason she suggests this is because introducing so many beneficial bacteria at one time can cause a die-off of bad bacteria, especially when on the SCD. This die-off is a good thing, but it can make you feel lousy for a few days and cause extra gas and bloating. Many people perceive this to be an inability to tolerate the yogurt, when this really is not the case. If introduced very, very slowly, a person is less likely to feel or notice this adjustment period.
Lactose intolerance should not be a problem with the home made yogurt, but as aoccc said, sometimes people are sensitive to the protein, casein, in cow's milk.
Carnival Huckster, you might be interested in getting your hands on a cook book (which really is waaaayy more than a cook book--it's fascinating!) called "Nourishing Traditions" by Sally Fallon. It's one of my all-time favorite books! It has an entire section devoted to fermented foods you can make. Who knew that home made fruit chutney had beneficial bacteria in it? Certainly not me!
Also sauerkraut, the way our great-grandmothers would have made it; loaded with beneficial bacteria! More possibilities for consuming the good guys to crowd out the bad guys!
