I know that I take in, on average, hundreds of calories per day less than this and I maintain my weight. What gives?
Those charts should be taken with a large pinch of salt. Calorie requirement varies hugely according to age, height and gender, but also according to activity levels, metabolism, and body build. The recommended daily calorie requirement of 2500 a day for men and 2000 for women is actually too high for many. As long as you're not losing any weight, I wouldn't worry a jot about
not eating enough.
