have you tried looking up organic /vegetarian recipes? I bet a lot of those are "healthier" for diabetes (excluding rice, or course)
I wouldn't have the first clue where to start for you...I've found that most folks around here have such specific diets of things they do eat, or don't eat, that you should probably just pick a main ingredient that you know you tolerate and look for a recipe with that in it!
Good luck to you, i feel your pain. My 2 kids are 4 and 5 and you couldn't PAY them to eat the same things that dad and I do...it's PB and J for them many nights a week.
