. I like helping people with the diet! EMom and a few others were the ones that clued me in to the existence of SCD, so it's nice to pay it back.
Sko, there are many many varieties of honey, so you may still find one out there that you really like. I get mine from a local honey guy, and he has orange blossom, wild mountain pecan (my fave), dessert blue clover (reminds me of molasses), catsclaw, pine flower, and mesquite. I've also had a eucalyptus honey, which makes me think of caramel. Yum!

Also, it's fine to flavor your soup with herbs. Just strain them out like you will the celery and whatnot.
And last but not least, your taste buds will change with the diet. I don't miss a lot of foods that I though I would (like potatoes). Really the only thing I sometimes miss are sweets. But since there are plenty of sweet treats on SCD, I don't miss them too much. The only thing I can think of that I really wish were SCD legal is chocolate. I'm thinking that in another year (which will make 3 years of SCD for me), I might try adding in cocoa powder, but we'll see
