Just thought I would share this 1 side dish I make that is supposedly a great anti inflammatory as well as great for diabetes. The magic veggie is Asparagus. I am not a fan of it canned or just baked so what I do is (got the idea from my mother who I thing learned about
it in italy) Take 2 stalks of fresh Asparagus (doesnt matter white or green I use green) snap the ends off. Get prosciutto sliced very thin (ensure that the deli places the paper between each slice or you will fight with it) and take those slices and cut them lengthwise in half. Wrap the 2 stalks of asparagus with the proscuitto (I wrap it in a spiral direction starting about
1 inch from the base). Repeat for as many as you want to make. After you have constructed the number of asparagus you want to make next sprinkle seasonings you may want on it (I use black pepper and lemon juice) also if grilling as I do you must spray them with non stick spray.
(tip :these can also be broiled or baked if you do not want to grill them however I like them to have a little char on them for additional flavor)
Set grill to low and place asparagus on the grill...in 3-5 min flip the asparagus over to cook the other side for the same 3-5 min (based on how hot your grill cooks)
After removing from the grill...if you can tolerate parmasean cheese get the brick type and use a potato peeler on it and shred some long pieces to melt over the asparagus...parmasean cheese aids in digestion!! (of course if you can handle the small amounts of lactose in it...they are just as good without the cheese)
