Get some dry ice. It'll keep things cold for a long time, especially if you take a small cooler for just the dry ice and Humira, and don't open it until you need to. Actually, with dry ice, you'll need to take steps to keep the Humira from freezing.
My wife takes Humira for Rheumatoid Arthritis, and I take it for Crohn's. We both do our injections on the same day, every two weeks. Works out well since we can remind each other when it is due. Last time we went camping, we just put it in the ice chest. Only had to wait one day until we needed it, but it worked fine. Dry ice should work well for longer periods. A really good high end ice chest will work too, if you pack it full of ice, keep it in the shade, and don't open it often, we've been able to keep ice for a couple of days out at camp.
Good move on the extra toilet and tent. We have the same thing. I like it, but can usually live without it. My wife will NOT go camping without it. Solar showers work good to, sometimes too well. Make sure you check the water temperature before using it, I burned the bejeeburs out of my back after leaving one out in the sun too long.
Enjoy the trip, and I agree what others said, I relax so well, that my symptoms usually calm down also.
