I started a few months ago, I am obviously a slow learner, because I have had a few slips here and there, and have had gluten, the last one was saturday. Had my grandchildren here and we made some really good and sweet floury cinnamon buns. I got so SO so sick after having at least 5 of those, LOL, stupid, though, I shouldn't even consider it!!! Every time I've had those darn slips I have been miserable, feeling bloated, got gasses big time, softer stools, and have got nauseau and felt really sick. Last time I was sick two and a half day, so I have just started to feel better again. When I feel well all the symptoms mentioned here are gone,
I have no gas problem at all, I feel quite normal. And I can have vegetables and sallads without getting any diarrhea.
So, for me, being gluten free is a no brainer. I am getting the point at last, and because I am a Scandinavian woman, I have learned to cook all my food from fresh. I have always baked my own bread, and am now baking my gluten free buns with nuts and seeds inside, and they're tasting absolutely fantastic. I buy a gluten free flour mix and make the buns and even cakes.

I have got one gluten free site that may lead you to other; this is a doctor that is in the theory that maybe all people with gluten sensitivity (not necessary celiac disease) should avoid gluten.
And there are science that claims that going gluten free could be great for all auto immune diseases.
