Well, I've been gluten free for 2 weeks now and while I can't say I've seen a huge improvement, it's not hurting anything. I'm having an easier time sticking to it than I thought I would (I don't eat out though) so I'm going to try to make it a month and see if there's any marked improvement.
I haven't tried too many GF products but I do like Udi's bread very well. I haven't found it to be too much of an added expense since I haven't been trying to substitute too many GF foods into my diet. I didn't want to be comparing GF crackers to regular ones, etc. It does take more planning though and more cooking. If you can tolerate salad, that would be helpful but I am not there yet.
Now, if I could just get my coworkers to quit having snack days.
