Thank you to all of you for the feedback, I really appreciate it. I do feel inclined to share with you Part 2 of what my old HS friend who claims to have masterd her CD. Again, this is a copy of her email, and is not necessarily my oppinion as I have no oppinion on CD, I am far to new to this to really know anything at this point.
(I am very excited that I get to swallow the pill with the camera in it on the 5th :) don't know why that makes me happy, just hoping to know more I suppose.)

Have you thought about using goat milk instead of almond milk in your smoothies? that's how i make mine... or you could just use yogurt & add some water to thin it out. I remember that was the 1st thing my doc told me- not to eat anything with guar gum or carragean. kefir is also really thin if you make it yourself & you could use that, though it has a bit of a zingy soury taste.
I'm the same way about cooking, totally stresses me out! I HATE recipies & get all tense! That's why I keep our meals simple, but simple really is the easiest for our bodies, so I guess it works out :) I swear by the ferments though... about 50% of what i put in my mouth has been fermented, so i'm crazy full of probiotics.
I take the same types of supplements as you, though I'm much better at taking minerals than vits, probably because i can feel the difference with the minerals. I don't take the goat protein, instead I drink goat milk, but even then not often.. mostly kefir & yogurts. I don't take the probiotic pills either, just too expensive & making ferments is so cheap & easy.
Once you get your body in a healthy balance, its really easy to keep it there. i don't even consider myself in remission, i just consider myself healthy. i'd eat this way even if i didn't have crohns, though maybe i never would have gotten this intense into health.. hard to say.
I don't know a lot of people who have beat crohns like i did, but most of them prefer to take the meds & eat & live more... conventionally. that's not an option for me. don't get me wrong, if something happened & i landed in the hospital like when i was a kid i'd take meds in a heart beat to get myself less inflammed. but i've gotten myself in balance & i'd rather stay healthy than live in that up & down cycle of sickness. once you know better, you do better. it breaks my heart when i hear of friends who have family members undergo major surgeries because of crohns. i wish i could tell them all that if they made changes, their taste buds would eventually become more sensitive & they wouldn't miss those doritos or mcdonalds or even those organic muffins. & they'd start to feel incredible!
you mentioned fear that damage could happen while you are trying to figure things out. Try to work through that! Fear/stress/anxiety... all those things mess up your hormones... fight or flight= adrenaline & cortisol. your body cannot create peace/healing/love hormones at the same time as the fight or flight hormones. love hormones are endorphins, oxytocin, relaxin, etc & those are VERY healing to your mind & your tissues, especially the oxytocin, it is literally involved in repair, which our intestines need. Every time you hug, kiss, hold hands, share a meal your body makes oxytocin, because it is also the hormone of love... so cuddle your child like crazy & it'll truly make you & your child healthier because of it! ...
