I'd certainly recommend my GI but I'm in the South East, so not much good. As much as I hate to mention a certain rival Crohn's forum, there seem to be lots more UK people there. Google Crohn's forum, you can't miss it.

Edit: As you probably don't have Crohn's, maybe it would be better to look up more general, UK-based, health forums instead. Or Facebook/Twitter support groups. It's tricky in your case, because there aren't really dedicated gallbladder forums out there, not the way there are for Crohn's, IBS or Coeliac Disease. Since you have to go through your GP for a referral anyway, I'd ask your GP for a GI recommendation. You can also visit local hospitals' websites, get some names of GI doctors, and look those up - it might or might not help. It's quite hard to get doctor recommendations in the UK still, even with the internet.
