Well here goes
I am not sure how you got to your list of foods but it is very high in carbs and sugar. Very low in nutrition and very low in protein. I do not know what you mean by broth, but assuming it is a 24 hour broth, then this is the only thing I would eat. If I ate what you are planning to eat, I would be very sick and be in a full on flare.
I 100% understand your confusion re diets. It is true that they contradict each other. The path I went was as follows. I read all the books, just like you. I then went to places like medpub and looked at the medical research. I then selected a diet and stuck with it. I stayed fanatically complaint to the diet and made tweaks to the diet to make it work for me. As this worked for me, I would suggest this to others. Pick one of the diets that "speaks" to you and really learn it and make it work for you.
OBTW - I do SCD, what some describe as the most limiting diet. I made a fabulous SCD complaint chocolate brownie for thanksgiving, that all my non SCD family thought was great. In fact the buggers ate it all, so not enough for me.....
As SCD has worked for me of course I would encourage others to give SCD a try. I know there are other successful diets but I have not done them, so I can not comment on others
