Hi WAMom
First - In regards to being 'sick of SCD' food.... I've been there, and many others have as well. The restrictions are very hard. I was strict SCD for 2-3 years. What got me through were these two cook books - just the food in them is so good that I still eat from them almost daily. More so much of my non-SCD family asks for recipes from them. So hopefully they will help some with the issue.
The lady that wrote them also has a website store where you can purchase pre-made goods.

Store (Pre-made goods):
www.jkgourmet.comSecond I have had some success in adding other foods such as white rice, potatoes, gluten free bread etc etc... and do not suffer any setbacks from this - but it was a long trial and error type thing. For example Glutton Gluten Free White Sandwich is perfectly fine with my system but their Gluten Free White English Muffins do me in... I'll be running to the bathroom soon after. There's many other things that I have the same result with. Every time I try something new and have a bad response, I revert to stick SCD for a day or two or until things settle back down and then move on and perhaps try something new.
Without any noticeable symptoms however it might be a bit difficult.
The best I can suggest is try some of the cookbooks for variety and change and maybe if that is still to strict try adding some easily digestible potatoes or rice or something along those lines - sort of Paleo type diet. Many have progressed from SCD to Paleo and have done quite well.
