Hi,

This is totally off topic. But I hope some of you can help me. I am going to fill pastry shells (The small individual  size ones) with a squash mixture and then bake them. so yummmyyy. The recipe says they freeze well. So for the ones I am going to freeze,, Do I freeze them before I bake them or after I bake them. Thanks so much.

Im no master chef but it doesn't make sense to me to freeze them first if your going to bake them after because they would just melt with the heat?? Unless the point of freezing them first is to make it easier to handle when packing it into the shells. Hope that helped a bit lol, again im no master chef

I think it might be like a pumpkin pie, if you freeze them after baking wouldn't the filling separate from the shell?

Freeze them after you've baked them, make sure they are completely cooled and in an airtight container (I'd mark the date on the container too).

No, they shouldn't seperate from the shell, especially if you make sure they are completely cooled, I'd even stick them in the fridge once they're at room temp and then from the fridge go to the freezer.

Thanks all. The squash mixture is cooked, mashed, squash,,sour cream, bacon bits and chopped onions.So it should stay together ok. Then you put it in those small pastry shells,, The dough kind that are in a small aluminum cup type thing.

The Squash Tarts were delicious. We are getting squash out of our garden so I am trying different ways of making squash.  I gave some squash tarts to my neighbor. she called back and said she loved them. I am feeling ok except for my back hurts a lot.ouchhh.

I have frozen pumpkin pies and baked later. Called bake off. Alot of the big companies do it. Makes it seem fresh, but all they do is bake them. I think either way is fine. You might bet alot of condensation if you bake first and then unthaw.

Awww right, PomMom, for those of us who aren't particularly well domesticated: how about giving us a little more specific recipe and baking times. The squash tarts sound delicious, but no way this undomesticated ole broad is going to go to all the work of trying to make them and have them fail. Pretty please, a litte more specifics .....

I'm so clueless when it comes to many foods, too...like these pastry shells - do you find them with the spagetti boxes or are they in the freezer section?
