You have a couple of really good questions there! I don't know the answer. Maybe someone else here will, but I highly recommend you post them at the yahoo group for SCD. You will enjoy it anyway, since you are starting the diet! They are experts there and really know their stuff! Simply go to yahoo, click on "groups" and join the BTVC-SCD group!
Did you purchase the Yogourmet yogurt maker? I recently learned (from the yahoo group) that it runs a little too hot (mine at about
122 degrees!). It was designed to make yogurt the "regular" way, which typically takes 4-6 hours. Therefore, by running it for 24 hours it heats too hot, kills beneficial bacteria--the same bacteria you need to take care of the lactose during fermentation!
There is an easy way to remedy this. Buy a dimmer switch (mine looks like an extension cord and is made for a lamp to plug into it--you can get them at Home Depot or Lowes) and plug the yogurt maker into it. Use the thermometer that comes with the yogurt maker to check the water bath temperature to keep it where Elaine says--between 100 and 110 degrees. It will take a little experimenting, but once you get it, you can mark the correct position for the dimmer with a permanent marker.
