Ivy, I've been doing fodmap for about a year. What I notice most is a huge reduction in IBS type symptoms like gas and bloating, also I make many fewer trips to the bathroom, but that could be due to other things I'm doing for crohn's therapy. I am also yeast intolerant, and have intolerances to other foods like eggs and beans, so my diet is quite limited.
I can tolerate some of the fodmap foods better than others--broccoli is far more tolerable than lactose, etc. Have you figured out which foods cause you the most problems? I think it is a matter of trial and error.
I did come up with ideas for a couple of fodmap friendly dishes that came out tasting really good!
Turkey Meatballs:
2 pounds ground turkey breast
1 carrot finely grated
1 stalk cellery w/ leaves finely chopped
The tops of a bunch of green onions, (just the green part) finely chopped
a quarter cup of minced flat leaf parsley
1/2 teaspoon fresh thyme
2 cloves of garlic, (small amount should be ok for fodmap) crushed.
1/4 cup gluten free rolled oats
1 large or 2 small potatoes grated with excess juice patted or sqeezed off
1 cup cooked but not over cooked rice, (a wild rice mix is nice if you can tolerate it).
1 finely sliced green pepper
1 cup diced fresh tomatoes
a few chopped fresh basil leaves
1/4 cup extra virgin or regular olive oil
1 tablespoon wine
1/2 cup toasted cashews
salt and pepper to taste
In a small frying pan brown the grated potato in some olive oil. Do not over cook, and after slightly brown add chopped onion, 1 clove minced garlic , parsley and thyme. Cook about 1 minute more.
Combine turkey, carrot, celery, oats and potato mixture in a bowl. Add salt here, to taste. Add rice and mix. Form into 2 inch balls and brown balls in a heavy frying pan in remaining olive oil as needed. Brown on all sides. Put balls into baking dish. In another pad stir fry the green pepper in a little more olive oil. When tender crisp add basil, wine,clove garlic and tomato. Cook until tomato is soft then pour over turkey balls in baking dish. Toss cashews on top and bake at 375-400 degrees for a half hour or so. Test to make sure turkey is well cooked. Some foil on the top halfway through should prevent the dish from drying out.
