When I was sickest it took a low FODMAP diet. I was reacting to everything. After a few months on that I went Paleo (it had to be very well cooked for optimal digestion), but was supplementing heavily with digestive and proteolytic enzymes too. I moved into green smoothies because vegetable fiber wasnt an option due to the strictures. That really has helped in healing enough to tolerate a well cooked predominately vegetable diet. I try to eat 40% raw living veggies and 50% cooked.. 10% animal proteins. Occasionally Ill eat grains, but very rarely. I dont eat any dairy, gluten, soy or sugar. Or, I should say.. I shouldnt eat those things, but the christmas season I decided to indulge too often in paleo legal (honey, coconut sugar) treats and I really felt the repercussions in the form of inflammation.
For the most part, I love my new diet.. it's just the inconvenience of eating anywhere but home that I hate and I miss being able to have anything sweet without my stomach flaring. I know it took a long time to get here and Ive only been healing now for under a year..
Everyone is so individual but hopefully you will find a diet that appeals to you. I really love this cookbook http://www.amazon.com/gp/product/B007BFRGYA/ref=docs-os-doi_0 I dont do any xantham or other gums or alot of gf replacements for wheat products tho. I dont miss them. My body hurts soooooo much less without them.
