Veggie soups, blended and sieved. Smoothies made with bananas or other fruits, again blended and/or sieved. You still get all the nutrients from the veg and fruit that way, particularly if you make the soups and smoothies yourself and drink them shortly afterwards. The only thing you won't get is the fibre; if you are prone to constipation you may need to take a 'safe' laxative like Miralax on a low-residue diet.
Mashed potato made with root veggies instead of potatoes is quite a nice alternative.
Sorry, I'm in a slight rush right now :-/ There are some veggies you may be able to eat if you cook them 'til they're really soft, peel their skins, or de-seed them. I'd stay away from sweetcorn and mushrooms, no matter what. Other veggies are a matter of trial and error.
I wish I could be more helpful than that, but I honestly don't know what to advise. For me, I was able to eat fruit, veggies and salad up until, I dunno, 2011. After my hospitalisation and liquid diet things changed. But I was actually glad to eat bland; I'd had it up to here with pain, so it was not a struggle for me. I think I'd spent too long eating foods that perhaps I shouldn't have done out of sheer stubbornness. Ironically enough, one reason I did so was out of trying to be 'healthy' and get my 5-a-day.
For lunches, I would have eggs, toast, cereal, or whatever, often followed by some yoghurt. Dinners I would have some of the meat and potatoes, but pass on the veggies or have only a very few. I did have soup. Did make myself the occasional peanut butter and banana smoothie, especially when I was on the liquid diet.
Hopefully in your case the low-residue diet is just a stop gap :-/ It's no wonder you are struggling, particularly as you have only had one bad pain episode which may or may not have been caused by a partial obstruction (it seems likely, but that's not the same thing as being certain). I don't there is the driving motive for you to avoid pain yet; hopefully you'll never end up in that boat!
PS: I also learnt to make a mean chicken stock >_>. That can be the basis for a lot of soups or sauces.
